Leave in the fridge for an hour or two before cooking so the chicken can marinate in the dressing.

- 1 butternut squash, about 850g - peeled and deseeded weight
- 2 red or white onions, peeled and cut into wedges
- 6 large whole cloves garlic, peeled
- 2 tbsp olive oil
- Salt and ground black pepper

- 1 tbsp wholegrain mustard
- 2 large courgettes, sliced thickly
- A few fresh thyme sprigs
